sweet potato ginger mash

 

ingredients

4 lb sweet potatoes

1 ½ tbsp finely grated ginger

8 oz butter  

¼ cup brown sugar

1 ½ tbsp kosher salt

½ cup heavy cream

1 tbsp chipotle peppers, chopped fine

2 tbsp lime juice

 

directions

Place sweet potatoes in a roasting pan and cover with foil. Bake in a 350 degree oven for 45 minutes until sweet potatoes are completely softened. Remove skin from sweet potatoes and hold warm in a mixing bowl.   Cut butter in 1 inch pieces.  In a pan, heat butter and sugar to dissolve sugar.  Add chipotles, cream, ginger and salt to a blender.  Blend well and add to butter/sugar mixture.  Bring to a simmer for 5 minutes. Remove from heat.  Add cream and butter mixture and lime juice to sweet potatoes. Mix with a whisk until smooth.
