roasted butternut squash
2 lbs butternut squash
½ cup light brown sugar
1 tbsp chopped thyme
½ cup butter
1 tbsp salt
1 tsp black ground pepper

 

directions

Peel butternut squash and dice into 3/4" pieces. Add squash and remaining ingredients to a clean mixing bowl and pour melted butter over top. Mix well. Lay the butternut squash out on a sheet tray. Bake at 375 degrees for 25 minutes, making sure squash is tender but still holding its shape.
